Students plant the garden in the spring and by fall there is lots of produce to be used during the school year.

For example, using the Marzano plum tomatoes grown in the garden the foodservice staff creates more than 1,000 gallons of tomato sauce.

Ryan is a graduate of The Culinary Institute of America and a former executive chef at Harvard University.
